It's not the most photogenic food but OH SO GOOD: home roasted bone marrow 🤤
I’m making bone broth from beef bones from @windmistfarm and scooped out some marrow to snack on before putting all the ingredients in the pot.
Bone marrow is mouthwateringly decedent in taste and texture and has so many nutrition benefits including being chock full of collagen.
Collagen is integral to bone, muscle and skin health. It’s a protein that supports structure and elasticity, helps maintain cartilage/mobility in the joints, strengthens hair, teeth and nails, and provides anti-inflammation and immune boosting properties.
Pro-tip: eat alongside vitamin c rich foods which are crucial to collagen synthesis. Broccoli, bell peppers, tomatoes, kale, kiwi, strawberries and citrus fruits are all great sources of Vitamin C.
Recipe

Roasted Bone Marrow:
2 to 3 pounds (907g to 1360g) Organic, pasture-raised beef marrow bones, split lengthwise or cut crosswise into 2-inch segments (it can also be roasted whole, just push the marrow out of the bone cavity when it's done)
Toasted slices of bread
Pasley Salad Topping:
(Optional but add a dose of vitamin C for collagen synthesis!)
1 teaspoon (5ml) champagne vinegar
1/2 teaspoon extra virgin olive oil
Flaky sea salt
Cracked black pepper
Preheat oven to 450°F (230ºC). Place marrow bones, marrow side up, on a rimmed baking sheet or in an ovenproof skillet. Roast until bones are lightly browned, about 20 minutes. (Some fat will render from the marrow, but majority of marrow should stay in the bone.)
Meanwhile, in a small bowl, toss parsley with vinegar and olive oil.
Sprinkle bones with salt and pepper. Serve bones immediately with toasts and parsley salad.
